YUM! Lisa and I made the best dinner. Every Wednesday night we get together to watch SYTYCD and we cook something to eat. We always make something new that neither of us have had and it is 100% (or pretty close) homemade. The food is always done right before the show starts, the drinks are always perfectly poured, and the entertainment is great (minus Mary screaming).
Tonight we made zucchini pasta with shrimp. Here is how.
1) Heat 1 TBS olive oil in a large skillet and cook 1/4 red onion, 3 cloves of garlic, and 1/2 tsp of salt over medium heat for 5 minutes. Add 1 can of tomatoes diced with the juice and 1/2 tsp salt and bring to a simmer for 5 minutes. Then cover and let simmer for 20 minutes.
2) Cut 4 zucchini with a veggie peeler. When the sauce is done take the sauce out of the skillet and cook the zucchini with a little oil until brown and wilty, then remove.
3) While cutting the zucchini with a veggie peeler, add 2 cups (or more) frozen, cooked shrimp to a skillet and warm. Add garlic if you choose (we did and it added a little POW!!)
4) Mix zucchini with the sauce and shrimp. Add 1-3 sprigs of fresh basil and salt and pepper to taste.

This is VERY flavorful. I was surprised. The original recipe is from the Cook Yourself Thin cookbook and it says to pair it with chicken Parmesan. It would also be good plain and if it was a little thicker would be like a veggie soup.
FUN! I wish you two lived in the cities! I also wish that I wasn't missing SYTYCD every Wed! Tear!
